Khaman Dhokla Recipe

Breakfast and Savoury

Khaman Dhokla is a popular traditional Gujarati snack known for its light, airy texture and mildly tangy taste. Made using Akshkuber Besan (gram flour), it is a healthy, steamed dish that requires very little oil, making it a great choice for breakfast, tea-time snacks, or light meals. The batter is prepared with curd, ginger, green chilli, and a touch of turmeric, then steamed until soft and spongy.

Ingredients:

For Batter

  • Akshkuber Besan – 2 cups

  • Sooji (Semolina) – 2 tbsp (optional)

  • Curd (Yogurt) – 1 cup

  • Water – as needed

  • Ginger-Green Chilli Paste – 1 tsp

  • Turmeric Powder – ½ tsp

  • Sugar – 2 tsp

  • Salt – to taste

  • Lemon Juice – 1 tbsp

  • Eno Fruit Salt – 1½ tsp

For Tempering (Tadka)

  • Oil – 2 tbsp

  • Mustard Seeds – 1 tsp

  • Curry Leaves – 8–10

  • Green Chillies (slit) – 2

  • Water – ½ cup

  • Sugar – 1 tsp

For Garnish

  • Fresh Coriander Leaves

  • Grated Coconut (optional)

Follow Method:

🥣 Step 1: Prepare Batter

  1. In a bowl, add Akshkuber Besan, curd, salt, sugar, turmeric, ginger-chilli paste, lemon juice, and sooji.

  2. Add water slowly and mix to make a smooth thick batter.

  3. Rest the batter for 15–20 minutes.

🔥 Step 2: Steaming

  1. Add Eno fruit salt to the batter and mix gently.

  2. Pour the batter into a greased plate or dhokla tray.

  3. Steam for 15–20 minutes on medium flame.

  4. Check with a toothpick—if it comes out clean, dhokla is ready.

🌶 Step 3: Prepare Tempering

  1. Heat oil in a pan.

  2. Add mustard seeds, curry leaves, and green chillies.

  3. Add ½ cup water and sugar, then boil for 1 minute.

  4. Pour this tempering evenly over the dhokla.

🌿 Step 4: Garnish & Serve

  • Garnish with chopped coriander and grated coconut.

  • Cut into squares and serve with green chutney.

🍽 Tips for Soft Dhokla

  • Use fresh Eno for fluffy texture.

  • Do not overmix after adding Eno.

  • Steam immediately after adding Eno.
